Exodus 7.14-24: Through this plague, God is seeking to show who is really in charge and provide a warning to Pharaoh of the chaos he is bringing. The presence of blood speaks to the need to repent and signals to the Israelites who is the true God to revere. Not the gods of Egypt, but the God of Israel, who will save them.
